What are the advantages and disadvantages of butter and ghee when it comes to cooking?

Asher Laub‘s insight:

1-2 tablespoons/day of ghee (found in multiple studies) does not increase risk of cardiovascular disease.  Keep your intake w/ in that range daily and your health will improve assuming a balance diet. Advantage of butter over ghee is vit k2. Advantage of ghee over butter are more MCFAs and SCFAs (medium/short chain fatty acids). Butter is harder to digest as it has more LCFAs (long chain fatty acids).
